Snap Pea Tempura



Serves 4


Ingredients

Al Purpose Flour, ½ cup

Sparling Water, ½ cup

Salt

Snap Peas, 2 cups, trimmed

Oil, 4 cups

 

Directions

Heat oil in your pot to 350 degrees.

 

Add flour to a bowl and slowly pour the sparkling water while whisking.  Add salt.  The batter should be thick enough to stick to your fork but not thick like pancake batter.

Add the snap peas.  Using tongs pull out the snap peas, let the excess batter drip off and place in the oil.  Fry in batches so you don’t overcrowd the pot.  Once they float and are crisp, about 3 minutes, place on a sheet pan lined with paper towels.  Sprinkle with salt and enjoy with your favorite dipping sauce.
